100% Palomino from the Macharnudo Alto vineyard. The wine has aged for at least 8 years in oak barrels under flor (layer of yeasts that cover the wine's surface inside the wooden barrel).
When the Phoenicians wandered over most of Europe more than 3,000 years ago, they not only left historical impressions for posterity. In the sunny Andalucia in southern Spain, another memory has been left behind, namely Sherry production. The Phoenicians tried to exploit the opportunities of the sunny country, and on the 23,000 hectares of land, which is calcareous and ideal for wine growing, they planted the vines they brought with them - and a new era has begun. The Valdespino family has been associated with the Sherry industry as far back as 1430, but Valdespino was only founded in 1875. It was therefore known from many years of experience that the geographical conditions for the production of good Sherry were present. However, they believed that with the right production, the Sherry could be made "just that much better" and based on this basis, Valdespino today produces Sherry of exquisite quality.
This Sherry has a light straw yellow color and a strong aroma of almonds. It is a complex Sherry which possesses a delicate, dry and fresh taste. The wine can be enjoyed now. After opening, the Fino must be refrigerated and must be drunk no later than 14 to 30 days after. Serve the wine at 8•C to 10•C for e.g. soups, dishes with shellfish or fish.
