The castle is located in Macau on the border with Margaux between the castles Cht. Giscours and Cht. Cantemerle. Back at the beginning of the 19th century, the castle was owned by the mayor of Bordeaux, Mr. Duffour-Dubergier, and though he also owned the famous castle of Graves, Cht. Smith-Haut-Lafitte, he always preferred to live at Cht. de Gironville.
In the 1930s, the castle began to fall into disrepair and production came to a standstill. In 1987, Mr. Fouin the castle and immediately began planting new vines and building new modern cellars. The result speaks for itself.
From 2004 Vincent Mulliez bought and took over the property, and immediately new investments were made, both in the vineyards but also in the cellars.
Today is Cht. de Gironville the only château in the whole of Bordeaux,x which is planted exclusively with what is called "base vines". This means that the vines are constantly checked by INRA (National Institute for Agricultural Research), and are therefore always in perfect condition. This means that many of Bordeaux's best and most famous châteaux receive cuttings from Cht. de Gironville when they replant.
Gironville is made from 47% Merlot, 43% Cabnernet Suavingon and 10% Petit Verdot, and the vines have an age of approx. 26 years.
Both the harvest and the subsequent sorting of the grapes are done by old-fashioned manual labor. Fermentation has then taken place in large steel tanks (80hl.), where skins and kvass are in contact with the must for approx. 4 weeks. It is during this process that the power and color are produced in the wine.
However, 25% of the harvest is fermented in new oak barrels.
This is followed by a longer aging in casks for approx. 12-14 months, a mixture of French and Hungarian barrel.
The wine is clarified (filtered) with egg whites in the good old-fashioned way and bottled. By doing it this way, the wine retains many of its qualities and therefore deposits will often appear in the bottle.
With Château de Gironville in the glass you get a great experience. The wine is deep red in colour. The taste is elegant and soft with good concentration followed by a fine vanilla from the aging in oak barrels.
