Domaine du Château d'Eau is located by the town of Colombiers, in the heart of the Languedoc vineyards.
The vineyard is located on a plateau overlooking the lakes of Vendres on one side and the Orb valley on the other. Vins de Pays d'Oc is certified organic farming and its wines are all protected geographical indications (PGI).
Terroir and grape varieties
The estate's soil is calcareous marl. There are also traces of ancient lagoons with their masses of petrified clams and oysters. These light soils allow deep rooting of the vine, promoting its development and balance.
The vineyard has 40% white grape varieties and 60% red, of which the following can be mentioned: Pinot Noir, Merlot, Cabernet-Sauvignon and Syrah for the reds, Chardonnay, Sauvignon and Viognier for the whites, Cinsault for the rosés.
Climate
Surrounded by a Mediterranean climate, a dry hinterland. High temperatures and good wind protection provide conditions very favorable for cultivation. The deep clay-limestone terroir, aided by the maritime influence, makes it possible to produce pleasant wines with lots of fruit.
The basement
Located on the hillside at the edge of the vineyard, it is partially buried on its rear, allowing the harvest to be brought directly into the tanks. The cellar is classified as a historical monument: it has a remarkable metal frame made at the beginning of the century by architects from Gustave Eiffel's design office.
Completely redesigned in 2005, the winery was designed to limit unnecessary handling of the grapes and wines to preserve their qualities. The vinification tanks are placed high up and the storage tanks below. All the work is done by gravity
