Chan de Rosas Albarino Rias Baixas
The winery where Chan de Rosas is produced is located in the small village of Cambados in the heart of "Albarino country" in the district of Rias Baixas, Galicia.
In the Rias Baixas appellation, especially the vineyards to which Chan de Rosas belongs, are located very close to the Arousa Strait out to the Atlantic Ocean. The area is known for cool and harsh weather much of the year, with many storms and low pressure. The vineyards are secluded, well-drained fields with sandy granite erosions, which contribute high acidity and resilience to the wines. The location of the vineyards close to the sea also adds a salty and mineral tone to the wines, which is very characteristic.
The grapes are harvested by hand in 15 kilo boxes. After pressing, the grapes are cold macerated at 7g for 12 hours. The must is then stabilized for 24 hours. The clear must then undergoes the alcoholic fermentation at a low temperature. Every week it is stirred so that the sediment has as much contact as possible with the must, which in the end gives even more complexity to the wine.
