The Diaz Bayo family has been dedicated to the cultivation and production of wine in Ribera del Duero for more than ten generations. More precisely, the winery belongs in Burgos, in the small village with the apt name: Fuentelcésped.
The climate in the area is considered a region with low moderate rainfall, long cold winters, dry summers and significant temperature fluctuations between the different seasons - but also between day and night and especially in summer - play a large role in the ripening of the grapes.
The cultivation of the grapes for Diaz Bayo is carried out under the guidelines for organic farming. The family carries out the production with great respect for the vineyard and nature, without chemical treatments or artificial fertilizers and therefore only uses organic fertilizers. All grapes are handpicked.
The vines are situated on sloping fields between 850 and 940 m above sea level
