Distilleria Santa Teresa was founded by Paolo Marolo in 1977. Since then has Marolo had its headquarters in Alba and in the surrounding areas of Langhe, Monferrato and the rolling hills of Roero are some of the world's best vineyards. The famous wines such as Barolo and Barbaresco, which are born here and provide the kvass for the grappa, deserve the distiller to show them due respect. At Marolo, you want to be loyal and true to the spirit of the vineyard; preserving the character of the grapes in the grappa rather than eradicating it. Slow, gentle distillation of completely fresh grape must in water bath heated kettles, one still for red grapes and one for green, preserves as much of the grape aroma as possible.

For a long time grappa was drunk uncooked, but in 1980 Marolo put the first grappa on tap. Or rather: they "forgot it on purpose", as the label announced. This Grappa di Barolo, which had rested in small casks of acacia wood, started a revolution in the grappa world. Today, Marolo are still pioneers in aging and some of the grappas rest for 5, 10, 20 or more years before they are bottled - this of course depends on what the grappa in question is best served with. The more cask aging, the more notes of vanilla and spices, but this often comes at the expense of the primary aromas: the aromatic, floral, fruity notes from the grape must.

In 1989, Marolo made the first "single vineyard" distillation, a rare type of grappa they still produce. In addition to grappa, Marolo also makes various liqueurs and a classic, Piedmontese amaro.
