The soil in the areas is composed of clay, sand and lime deposited from the rivers. The dry climate makes it necessary to irrigate the vineyards. Irrigation is sparse. The vine receives only the amount of water that is sufficient for perfect development of the bunches.
The grapes ripen under the influence of the bright sunshine, and at the harvest in February the grapes are fully ripe. After picking early in the morning, the still cool bunches are brought to de-stemming and pressing. Fermentation takes place at a low, controlled temperature to preserve the delicious fruit of the grapes in the final wine.
