The producer behind this organic cava is Vicente Gandia, whose main estate Hoya de Cadenas is located 90km west of Valencia, in Utiel-Requena.
The Valencia region is one of the 8 in Spain that is allowed to produce Cava.
All the grapes used for this wonderful cava are organically grown and certified, and consist of 50% Macabeo and 50% Chardonnay. Normally, Cava rests 6-9 months in the bottle before being released, but here the cava spends a full 15 months in the cellar before being released.

Vincente Gandia El Miracle Cava Brut (Eco)
is straw yellow in color with elegant and persistent bubbles. The scent is clean and soft, with hints of citrus, lime and a sea of ​​lovely floral notes.
The little-known grape Macabeo offers a magnificent presence in the taste - and in collaboration with Chardonnay this becomes a not too dry, but at the same time fruity cava with a long aftertaste and very well-balanced structure.

We recommend this cava as an aperitif, or for example along with oysters, grilled fish, sushi and seafood.
